    Two things I love: takeout and Cava. Something I don't love: spending my money on takeout. The good news is, with these Copycat Cava Chicken Bowls, you don't need takeout.     Why should I make these copycat cava chicken bowls?

    The real question is, why shouldn't you?! Here are some of the many reasons you should make these copycat Cava chicken bowls:

    • They're way less expensive than take-out!
    • You can control exactly how much of each ingredient you include in your bowl, which makes it easier to track points and/or calories or macros.
    • They're delicious! The chicken is SO juicy. We make the chicken for these bowls on the grill, but you could also make them in the oven or using a cast iron skillet. Also, we used chicken thighs for this recipe - I think they make it so much more delicious, but if you want to cut back on calories/points, feel free to swap them for chicken breast.
    • You can make a huge batch and have leftovers for lunch or dinner later in the week!
    • Did I mention they're delicious?!

    What do I need to make these copycat cava chicken bowls?

    Honestly, you can throw in whatever you think would taste good! But here's what I recommend using:

    • Mixed greens
    • White rice
    • Boneless skinless chicken thighs (as I mentioned above, you can swap these for chicken breasts!)
    • Tzatziki
    • Feta cheese
    • Hummus (we love using the red pepper hummus from Trader Joe's)
    • Seasonings: cumin, salt, pepper, garlic powder
    • Lemon
    • Cucumber
    • Tomatoes

    That's all you need!

    How to make these bowls

    The first thing you'll want to do is season the chicken generously on both sides. As I mentioned, I used boneless skinless chicken thighs, but you could also use chicken breasts to cut back at points/calories. Then, you'll cook the chicken - we grilled it, but you could also bake it in the oven at 425 for 25-35 minutes.

    While the chicken is cooking, spend a few minutes prepping your ingredients! Chop the tomatoes and cucumbers and begin cooking your rice. Add the rice, mixed greens, tomatoes, cucumbers, feta cheese, hummus, and tzatziki sauce to a bowl. Once the chicken is done cooking, let it rest for a few minutes before cutting. Then, cut the chicken and at it to your copycat cava chicken bowls. When it's all assembled, squeeze lemon on top to finish it off. Mix it all together and enjoy!

    Ingredients

    Scale
    • 1.5 pound boneless skinless chicken thighs (this will make 4 servings of chicken - I recommend using 4oz of chicken in each bowl and saving the rest for leftovers!)
    • ½ tsp garlic powder
    • ½ tsp salt
    • ½ tsp pepper
    • ½ tsp cumin
    • 1 lemon
    • 1.5 cups mixed greens
    • ¼ cup chopped tomatoes
    • ¼ cup chopped cucumber
    • 2oz (28 grams) feta cheese
    • ½ cup cooked white rice (I use frozen white rice from Trader Joe's to make this easier and faster!)
    • 2 tbsp tzatziki (I used Esti brand)
    • 2 tbsp hummus (you can use any kind - I love red pepper hummus)

    Instructions

    1. Preheat grill to medium-high, or preheat oven to 425.
    2. Mix together the garlic powder, salt, pepper and cumin. Season the chicken generously on both sides.
    3. Squeeze ½ lemon over chicken.
    4. Cook the chicken on the grill for 10 minutes, flipping halfway through, or in the oven for 25-35 minutes. Cook to an internal temperature of 170 degrees F. Let the chicken rest for 5-10 minutes once it's done cooking before cutting.
    5. While the chicken is cooking, chop your cucumber and tomatoes and cook your rice.
    6. Assemble your bowls: add the rice, mixed greens, tomatoes, cucumbers, feta cheese, hummus and tzatziki to a bowl.
    7. Once the chicken is done resting, slice it and add it to your bowl.
    8. Squeeze the other half of your lemon over the bowl to finish it off.
    9. Mix it all together and enjoy!

      I love this! Idk why I was trying to make mine complicated by making a yogurt dill or garlic sauce, but this is perfect!

      This was literally SO amazing. Definitely adding to the weekly rotation. We didn’t even measure the spices just sprinkled each side. Love that it doesn’t really require measuring. I used the 3 min microwave white rice from the freezer and it was so easy. We switched out hummus for avocado bc we don’t like hummus and it was delicious! Sharing this link with everyone I know.         Oh also we just used sour cream/dry dill/ lemon juice to make the dressing bc we had it on hand and it worked great.
