Chicken Piccata

Hi, guys! It’s me again. I got a few messages asking me about the Chicken Piccata I made earlier, so I thought it would be easier for me to put it into a blog post. That way, too, it’s easier for you (and me!) to go back and reference how many SmartPoints the dish was, and which specific brands I used! I hope this is helpful – I took the recipe from Skinnytaste (my absolute fav!) and only changed it slightly! I also find that sometimes I shy away from recipes that make a ton of servings, because it can be difficult to do the math and figure out the SmartPoints if you only want two servings (Do I sound lazy? Probably a little… haha!), so I’m excited that the recipe below makes just two servings!

Ingredients

-Cooking spray (0sp)
8oz total skinless boneless chicken tenderloins (2sp)
-Salt & pepper (0sp)
-1 large egg white (0sp)
-1/3 cup seasoned whole wheat bread crumbs (I use the Progresso brand and it’s 4sp for 37g)
-1/2 Tbsp margarine (I used “I Can’t Believe It’s Not Butter”) (1sp)
-Juice of ½ lemon, save the half (0sp)
-1/8 cup dry white wine (I use this Holland House White Cooking Wine) (1sp)
-1/4 cup reduced sodium chicken broth (0sp)
-½ tbsp capers (0sp)
-Sliced lemon, for serving (0sp)

Directions

In a small bowl, mix the egg whites and 1 teaspoon of water together. Place the bread crumbs on another plate, and add salt and pepper to the mixture. After rinsing chicken, dip each chicken tenderloin first in the egg, then into the bread crumbs, until the chicken is coated.

Heat a large saute pan over medium to medium-low heat, and spray the pay with cooking oil. Lay the chicken on the pan, and cook for 2-3 minutes on each side, until the chicken is cooked through. Set aside until you make the sauce.

For the sauce, clean the saute pan or use a separate one. Over medium heat, melt butter, add the lemon juice, wine, chicken broth and the reserved lemon half. Boil over high heat until reduced in half, about 2-3 minutes. Discard the lemon half, add the capers. Spoon the sauce over the chicken and serve with a slice of lemon.

As you can see, this entire recipe is 8sp – so just divide the final product in half, and you have an amazing meal for just 4 SmartPoints per serving! Enjoy 🙂
