This Peach Caprese Salad is a summertime take on a classic favorite. Made with tomatoes, mozzarella, basil and peaches, and topped with balsamic vinegar, olive oil, balsamic glaze and a sprinkle of salt, this will be your go-to summer side dish. 


  • 2 ripe peaches, sliced
  • 2 ripe tomatoes, sliced
  • 15 fresh basil leaves
  • 8 ounces fresh mozzarella, sliced
  • 1 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • salt, to taste
  • balsamic glaze, to taste


  1. Layer mozzarella cheese slices with tomatoes, peaches, and basil. Drizzle with balsamic vinegar and olive oil. Top with salt and balsamic glaze to taste, and serve.
